El jugo de remolacha diario podría ayudar a personas con problemas cardíacos comunes

El equipo estudió a 114 voluntarios sanos: 78 que recibieron una vacuna contra la fiebre tifoidea para aumentar temporalmente la inflamación en los vasos sanguíneos y 36 que recibieron una crema para crear una pequeña ampolla en la piel para observar una inflamación más localizada. Los voluntarios bebieron 140 ml de jugo de remolacha todas las mañanas durante siete días: la mitad de ellos bebieron jugo con alto contenido de nitrato, mientras que la otra mitad bebió jugo sin nitrato.

En el grupo que recibió la vacuna contra la fiebre tifoidea, los que bebieron jugo de remolacha rico en nitrato tenían niveles más altos de marcadores de óxido nítrico en la sangre, la orina y la saliva en comparación con los que consumieron el jugo bajo en nitrato. También tenían niveles circulantes más bajos de un tipo de glóbulo blanco llamado monocito inflamatorio, y los monocitos que permanecían en su sangre se volvieron más antiinflamatorios.
El jugo alto en nitrato también pareció restaurar la función del endotelio, las células que recubren el interior de todos los vasos sanguíneos. El endotelio es crucial para mantener el funcionamiento normal de los vasos sanguíneos, pero se pierde en la inflamación.
El equipo descubrió que las ampollas se curaron más rápidamente en el grupo que bebió el jugo de remolacha rico en nitrato, y que la cantidad de glóbulos blancos inflamatorios en las muestras de líquido tomadas de las ampollas fue menor después de tres días.
Los investigadores creen que el aumento de los niveles de óxido nítrico ayudó a acelerar la rapidez con la que los voluntarios pudieron recuperarse de la inflamación al cambiar las células inmunitarias clave de un estado que promueve la inflamación para que se vuelvan más antiinflamatorias. Piensan que esto podría tener beneficios para las personas con enfermedad coronaria, una condición que afecta a una de cada 30 personas en el Reino Unido.
